Sweetcorn and carrot soup with pork (粟米紅蘿蔔豬骨湯)

Method

Soak the tangerine peel for 20 minutes and scrape off the white pith.

Blanch the pork. Put it in a pan of cold water, bring to the boil, boil for 5 minutes, then drain and rinse.

Boil the soup. Bring the water to the boil, add everything except the salt and boil for 15 minutes.

Simmer. Cover and simmer for 2 hours.

Season and serve. Add salt to taste and serve the soup, with the corn and carrots.

If there's one soup almost every Cantonese family knows, it's this one. Every ingredient is easy to find in a UK supermarket, it's gentle and sweet, and it's as good for the rest of the family as it is for a new mother — so it's a useful one for a 陪月 to make in a big pot.
Tips
- Sweetcorn: fresh cobs are best in late summer; frozen cobs work all year.
- Make it heartier with a few dried shiitake mushrooms or a handful of peanuts.
- Leftovers: divide into smaller containers so they cool quickly, get them into the fridge within 1 to 2 hours, eat within 48 hours, and reheat once, until steaming hot.
